[懒人卤肉简易版/Braised pork in soy sauce]




自从有了多功能高压电锅,俺便启动‘懒人模式’。现今社会讲求的是速度,省时又省钱。只要能用高压锅做的饭菜,基本不用煤气了。我们家每周烧一次卤肉,因为女儿喜欢吃水煮蛋淋上香香的卤肉汁 :)懒人妈咪的秘方是加了白酒,香气十足啊!

准备这道美味全程只要半小时左右。启动‘高压’烹煮后便无需看火,还可继续做其他菜。所以,妈咪虽然‘懒’却是做饭超人哦^^

[客家菜板/Hakka Dumplings]




    我是从小吃着菜板长大的‘客家妹’。记得我上小学时,奶奶是邻里出了名的菜板好手,经常召集亲朋戚友到家里制作菜板,做的都是传统口味,有蒜板、韭菜板、咸菜板、沙葛板。我最爱沙葛板,馅料清甜爽口还有那恰到好处的胡椒粉味儿!可恨当时只懂吃不懂做,几十年后怀念着儿时的味道,只能自个儿摸索。。。摸索的结果是,客家传统的面皮是由粘米粉和木薯粉混合而成的,木薯粉会让冷却后的板皮变硬。所以,我用糯米粉取代了部分木薯粉(详细比例请看制作过程)。以前的长辈制作菜板都是几十个、上百个的批量生产,然后分给左邻右舍;而现在咱都是小家庭,做上十几二十个就够了,所以我的配方是‘自供自给’,估计前人要做几个菜板反倒还做不出来呢! :P
    制作菜板的挑战是揉面团和制作面皮。和面时面团必须是烫手的,要练‘铁砂掌’就趁这时练吧,哈哈!面团只有在烫手的时候揉搓才能起筋变得有弹性,否则将无法拉伸面皮;没有弹性的面皮,做出来的菜板皮厚且容易破皮。我目前唯一的缺憾就是杯子状的面皮做不好,只能做个半月形。感到满意的是面皮可以擀得挺薄,蒸出来晶莹剔透的且个个完好无缺,感觉可以挑战做虾饺了,呵呵。。。

[无水脆皮鸡蛋糕/Old-Style Chinese Egg Cake]


    小时候就喜欢吃炭火烤的甜甜脆脆的迷你鸡蛋糕,逢年过节,老妈更不忘备上几罐,不是给客人吃的,是自家吃的呵呵...人老了,就会怀念儿时的味道,无奈现代家居很难做到炭烤蛋糕了,用烤箱还是可以的吧…

    做脆皮蛋糕的重点就是不加水,Q润可口的戚风蛋糕截然不同。可是脆皮蛋糕的组织也像海绵一样充满空洞,弹性十足;但是毕竟无水,吃起来口感比较干涩。所以,吃这款蛋糕,必须来杯kopi-o。绝配!当然,小时候配的是Milo~

[南瓜小蛋糕/Pumpkin Muffins]


Pumpkin is a natural sweetener for all kinds of dessert. We don’t have to add much sugar, or we could simply go without sugar for health purpose. Pumpkins constitute a ‘light’ food, ideal for weight loss diets. The water content is very high and the food is very low in calories. However, I love to blend a little butter to it to create an aroma that boosts my taste buds even more, haha... Anyway, these little pumpkin muffins aren’t as fatty as you think they are... you can tell by looking at my size ;-)

[奶香吐司/Basic White Bread]



I still remember my first bread dough was to make a simple white loaf. It was a 100% success and it tasted even better than those sold in  stores! I was so excited that I couldn’t sleep all night :)  From then on, our family began to have 99% homemade bread every day.

I always love simple food. Simple is good. It fits well with my living philosophy too! Basic white bread is very versatile. It can be made into sandwiches, French toasts, mini pizzas, garlic bread... or you simply spread jam or butter on it. Yummy!

[肉松面包/Meat Floss Buns]


Meat floss buns are one of my favorite snacks. Remember my good old days in Shanghai, I used to slip into a convenience store to get a meat floss bun on my way home. The walking distance from the subway station to my residence took 15 minutes. That was the time before dinner… you know, my tummy was drooling and the bun tasted extraordinary delicious!

But ever since I started to make bread, my bag was always packed with one or two buns so I would never step into any store for such craving purpose. Seriously, that saved me a lot of petty cash :)

[自制面条/homemade noodles]


面条机是我从上海回国前淘的最后一件宝贝。打从跟面粉打过交道,宣妈对任何有关烘焙或制作点心的机器都很感兴趣。。。应该是中毒太深了,呵呵。。。

宣爸一直不解:“要吃面,买来吃不就得了?”Hmm, no, no, no… 制作点心讲的是passion。不是同道中人是不能理解这当中的意义啦!宣爸,我们还是各司其职。。。我尽情的做美食,你尽情的吃吧 :)
